  • (cane) sugar 2.5kg Non inverted
  • mate ~1kg (2x ~500gr pack)
  • water ~40L for tea + ~6L for sugar
  • salt ~10gr
  • lemon juice (fresh!) 440gr *
  • ginger 310gr

test batch march 2023, 30 liters

Those things are very approximate, cause scale was missing, temperatures where also pretty random cause thermometer was missing

  • sugar 1.6kg
  • mate ~.65kg
  • water ~26L for tea + ~4L for sugar
  • lemon juice ~400ml
  • lemon zest
  • ginger 200gr

  • peel of 5 lemons
  • juice of 10 lemons ~ 0.6 liter
  • 10gr salt
  • 45 tea water
  • 5 liters water for sugarwater
  • 350 gr ginger
  • 2.4 kg of sugar
  • 1kg of mate

procedure

  • bring 40 liters in >50 liter pot to boil
  • boil ,sugar, ginger, zest
  • juice 10 lemons, and keep it
  • once 40 liters reach boil, let it cool down to 80, then put mate in pot (we are not using tea bag this time)
  • [was not done] clean barrel and desinfect it
  • [was not done] purge barrel with co2
  • once mate taste good, poor sugarwater in mate pan
  • then poor lemonjuice in barrel
  • then start pouring (filtered) mate tea in barrel (put hose all the way down, start the flow, and don't touch it anymore)
  • when barrel is full, cap it with co2 and close it

how to make the mate

  • put 5 liters of water to boil
  • put 45 liters of water to boil
  • dissolve the sugar in the 5 liters of water
  • then add ginger to 5 liter pot, and let it cook
  • then add the citron to 5 liter pot
  • wait until 45 liter pot has reached 80 degrees
  • then add the teabag with 1kg of mate, and keep stirring it
  • when taste of tea is good (usually after 5 / 10 minutes), take the teabag out
  • let 5 liter pot cool down to 80 degrees, and add the contents through a filter to the 45 liters pot
  • take a hose and use the law of communicating vessels to get the 50 liters of mate in a sterilized beer barrel, do this when it is stil hot
  • close the barrel and put it outside to let it cool down, salty icewater and movement can be used to speed up the cooling down
  • once the barrel has reached ambient temperature or lower, put it in a fridge to further cool it down to <5 degrees
  • determine the temperature of the liquid in the barrel for the next step
  • connect co2 to the barrel in the fridge, and set pressure on the value you look up in the carbonation chart: https://brewshop.no/images_hovedside/Karboneringstabell.pdf
  • wait untill co2 has been absorbed into the drink
  • now you should have a barrel of lagmate

alternative methods

carbonation of mate with fermentation

Its possible to use sugars that do not ferment (for ex. stevia) to sweeten the drink. Then add enough fermentable sugar when bottling or kegging + some yeast. The yeast will then create the co2.

Rabarber is quite easy plant to grow, so we could plant a lot of it, and make rabarber drink next year.

Its possible to do beer quite fast (1 week, or maybe less, fermentation at 43degrees celcius, then cooling down and carbonation), by using kveik yeast and pressure fermenting (fermenting in a beer barrel with spunding valve)
