for recipes etc. see mate

things we have

  • kegerator fridge (but all pieces of that gets used for all other steps too) got trown out
  • 3 30liter barrels only 1: (1 broken, other one in use for beer, 1 good one)
  • 1 50 liter barrel
  • 20kg co2 cylinder
  • ph-meter (ph determines what organisms are gonna grow in the mate)
  • thermometer BROKEN!
  • teabag (needs to be replaced, got moldy)
  • capper
  • lots of bottles got thrown out
  • 2 big pots (in mkz)
  • beer cooler with 2 circuits

Stuff to figure out

Schema

This chart demonstrates the way Mate Brewery works.

Materials

  • what materials to use for tubing
  • Is copper / brass ok to use with acidic fluids?
  • How to fix up shitty surface on stainless steel
  • passivisation of stainless?
  • how to clean
  • is slowly cooling the barrel down problematic for infection? Should we use a heat exchanger to quickly cool down?

Cleaning

Someone should write what they are used for, in what quantities and temperatures.

Usefull cleaning products

Acids
  • phosporic
  • citric
Bases
  • sodium hydroxide

Cleaning products not to use for sure

  • anything with parfum
  • anything containing bleach (it will promote oxidation of stainless)

Things to be build

Containing:

counter pressure filler

Should make that we have less oxigen (and foam) while filling bottles.

Here the concept is explained: https://www.icfillingsystems.com/general/a-guide-to-counter-pressure-isobaric-filling/

What needs to happen is connecting all the hoses and stuff, and probly putting it on something that goes up and down, like the table drill stand.

We have one like this: https://brouwland.com/en/manual-bottle-fillers/11946-manual-stainless-steel-counter-pressure-filler.html

Cleaning: - After use we recommend to run a peroxide based cleaning product through the filler (such as PBW or Chemipro Oxi ) and rinse out with water. - Before the next use rinse again with a phosphoric acid based sanitizer (e.g. Star San).

fast carbonator

That is basically a pump that pumps mate around the barrel, inline is a T-piece with a carbonation stone, in this way it should be possible to carbonate a barrel in hours instead of days.

We have the carb stone and pump, what needs to be figured out is how to convert an A-coupling to have liquid flowing through the co2 side (it has liquid blockers in it now) << there is A-coupler without liquid blockers

bottle cleaner

Machine that sprays bottles first with cleaning stuff, and then flushes them with clean water

tapping installtion

compensator tap, connected to cooler and barrel

Pics of parts we have :

water manifold

barrel couplers (A-type and bajonet), compensator beer tap

A normal beer tap regulates the flow of the drink into the glass. A compensator tap, on the other hand, has a nozzle system inside, so you can tap drinks without foam. However, the compensator tap requires a higher pressure. From the outside, the difference is only visible through a small adjusting lever on the side with which the flow cross-section inside is changed. A compensator tap is particularly suitable for cola or lemonade drinks. Compensator taps often have a so-called "foam button" to deform the foam. A special tap is required for Stout beers such as Guinness. Stout beers require nitrogen to produce a particularly creamy foam.

bottle washing machine

We have a working dishwasher, that needs to be converted to a machine that washes bottles, idea is to build a contraption from copper pipe where the bottles gets put on upside down, in each tube it will have holes that wash the inside of the bottles. That thing will replace the rotating arm at the bottom of the dishwasher, top arm will stay to wash the outside of the bottles.

T-piece with taps in carbonator circuit

  • allows to prime the pump without disconnecting hoses
  • allows to push out the water / desinfectant in the hose with mate from the barrel
